Low Sodium Heaven!

Low Sodium Heaven!I am in low sodium heaven this morning! I have logged my breakfast, lunch and snacks and my total sodium for the day so far is only 646 mg!

The other day when my husband went to the grocery store, he found me a "no salt" turkey deli meat made by Dietz & Watson. Today for lunch I will be eating that sandwiched between two slices of sodium free bread from Trader Joe's!

If I scrolled back through my logs, I would eventually come to the journal where I was bemoaning the dreaded sodium beast (complete with a picture of Morton's salt ...

ODE TO TURKEY DAY

The turkey shot out of the oven,
And rocketed into the air.
It knocked every plate off the table,
And partly demolished a chair.

It ricocheted into a corner,
And burst with a deafening “BOOM,”
Then spattered all over the kitchen,
Completely obscuring the room.

It stuck to the walls and the windows.
It totally coated the floor.
There was turkey attached to the ceiling,
Where there’d never been turkey before.

It blanketed every appliance.
It smeared every saucer ...

Here's a new way to prepare your turkey.
1. Cut out aluminium foil in desired shapes.
2. Arrange the turkey in the roasting pan, position the foil carefully. (see above picture for details)
3. Roast according to your own recipe and serve.
4. Watch your guests' faces...

I am hoping for some help. I just cooked 1.25 lbs of ground turkey. It yielded 4 cups of meat after I drained the fat from it. I don't have a scale yet to weigh it. Has anyone already calculated the basic nutritional data by cup so I can add this into my food log for today? ...

An even better Turkey Bolognese

In a recent issue of Everyday Food, Emeril shared his "lightened up" recipe for classic bolognese. He substituted turkey for the standard pork and beef; however he decided to leave in the half-and-half and use turkey bacon (which is really bad if you're watching your sodium -as we pointed out in our last post). So m.o.m took a look at it and decided we could do better.

Here is our take on the rich meat sauce.

Ingredients

  • Extra virgin olive oil, 2 TB (18 grams)
  • Onion, 1 large (204 grams) -finely chopped
