Smooth and delicious soup!

1 large bunch broccoli
1 tbsp butter
3 cloves garlic, minced
1 onion, chopped
salt and pepper
2 potatoes, peeled and chopped
4 cups reduced-sodium vegetable or chicken stock
2 cups milk
1/2 cup shredded cheese

Cut broccoli tops from stalks. Peel stocks and chop coarsely. Cut tops into small florets and set aside separately.
In a large pot, melt butter over medium heat; saute garlic, onion and 1/4 tsp. each salt and pepper for about 5 inutes until garlic and onion are softened. Add broccoli stalks and potatoes and saute for 1 minute.

I cut and pasted this from a typed version I have in Word, so the formatting on the ingredients isn't great, but I think you should be able to follow. And, I haven't made this in a while, so I haven't entered it to get the stats.

Ricotta Cake

Butter a 10" springform pan. (You can half the recipe and it will fit in to a regular pie plate. I actually used a big pottery, deep dish pie pan and the whole recipe fit just fine.)

Dust pan with flour, fine crumbs, or ground nuts.

Cauliflower "mashed potatoes"
I shared this recipe with my daycare providers and thought I should try it myself! So I made it tonight for my family. It's something different and we will probably do it again.

You can vary the amount you make, this is for a big batch:

One head of cauliflower
1/2 cup milk
1 tbsp butter
pepper to taste

Cut up, rinse and steam the cauliflower (or cook whatever method you chose) until tender.

Place everything in blender or food processor and blend until smooth.

This is so easy. I saw this on Blaine's Low Carb Kitchen several years ago and it's a keeper. Blaine's recipe was more complex but this is how I do it now and just love it.

1 8-oz package of button or baby bella mushrooms with stems. Aim for about 1 1/2 to 2 inch diameter.
1/2 cup grated mozzarella cheese
3 Garlic cloves, chopped or 1 TBS chopped garlic
1 tsp cumin
Non-stick Cooking Spray or Oil spritzer
Fresh ground black pepper to taste.

Reheat oven to 375 degrees.

I tried out a new recipe for breakfast this morning for me and the S.O.

So easy and a yummy way to shake out the oatmeal rut.

(serves 4)

1 cup oatmeal (I used old fashioned. I imagine anything other than steel cut would work equally well)
1/2 banana
10 egg whites
2-3 tsp brown sugar
cinnamon to taste.

Put everything in a blender/food processor and blend until smooth.

Spray oil onto nonstick skillet, spoon mixure on and cook like pancakes, flipping when bubbles form or the sides start to look dryish.

Chickpea CurryAnd to balance out the saturated fat from my Breakfast Chai Amaranth, I will be eating some of this amazingly inexpensive and easy chickpea curry recipe. I wasn't willing to wait for the beans to soak so I used canned garbanzos but you could almost eliminate the sodium w/ dried chickpeas.

When I was in college I participated in a (mostly) vegetarian dinner co-op, and we tried this one night (our significant increase in the spices is reflected in the recipe below). It was a big hit, but its Moroccan-ness was called into question. Thus my friends and I re-dubbed it "Ambiguously Foreign Lentil Soup."

Hey Dolly! I just made the Grape Nuts bar recipe you posted earlier today, but I added a little more cinnamon (4 grams total) and Blackstrap Molasses (30 grams) and now the Nutritional info says it's 50 percent of the RDA for Iron per serving!!!

(oh, I also forgot to put in the vanilla! LOL!)

Taken from: "Breaking the Food Seduction" By Dr. Neal Barnard (Good Book)

1.5 cups old-fashioned rolled oats
1/4 cup raisins
1/4 cup raw nuts or sunflower seeds (I used walnuts)
1/2 teaspoon cinnamon
2 cups fortified plain or vanilla soy or rice milk
1/4 cup frozen fruit juice concentrate, thawed, undiluted

Ingredients
1 lb ground turkey
13 cherry tomatoes
2 egg whites
3/4 cup bread crumbs
1/2 cup skim milk
1 1/4 cups chopped onion (chopped VERY fine)
1/2 tsp oregano
1/2 tsp basil
1/2 tsp garlic powder
salt + pepper to taste

Preheat oven to 375 degrees.

In a bowl combine all the ingredients except meat and tomatoes.

I can't remember who it was, but someone earlier this month asked about how we all like to prepare chicken breasts. I found this recipe and it fit the bill very nicely. I pounded the chicken breasts thin and used a nicely seasoned pasta sauce in a pouch in place of the diced tomatoes and seasonings. I loved it, the youngsters thought it was tolerable...probably too many onions and a dark sauce turned them off. But so much flavor!

I tried another recipe from the Jan/Feb issue of Eating Clean and all I can say is WOW! It was very good! The only veggie burgers I have ever had are the frozen Boca Burgers and they are nasty compared to this. It was fun to make too (even though my husband said the house smelled like B-O, it sure did not taste like that!)

Well, I've hinted around about this recipe, so figured it's about time I get it in here.

Black Bean Chocolate Torte

8 oz (240ml) black bean puree -
use a food processor or some really good elbow grease and a masher! Also, I usually use the whole can of beans, if I use a can, so it's closer to 15 oz.
4 oz 120g)semi-sweet chocolate squares, melted
with: 2 Tbs. coffee
1/4 lb (115g) butter, unsalted
3/4 c + 1 Tbs.(195ml) sugar
3 eggs, separated
1/3 c (80ml) walnuts, ground

I'm home alone, so it's tonight's dinner for one. Plus, a plain ol' sweet potato baked in it's skin. When done, just split open and sprinkle a half tsp of cinnamon on top.

How did I make this?
Let's see now, it's sort of layered:

3 c. spinach or more on bottom
1 tomato cut in small pieces (can dice if desired)

then mix in the olive oil dressing:

Olive oil
1 tsp. natural rice vinegar
1 garlic clove (mince or use a garlic press)

Every 3-4 months I do a "baking blitz" in which I cook a bunch of entrees, sides, breakfasts, etc. and freeze them in individual portions so I can easily pull them out for meals during the week.

Anyways, I have a recipe that calls for 1/2 cup of red wine (it is specifically a turkey sausage ragu from Clean Eating magazine). I do not have red wine, but I have zinfandel, white wine, and red wine vinegar. Will any of these work?

Light vegetable oil cooking -- spray
1/4 cup Cornmeal
1 teaspoon Dried thyme
1 teaspoon Dried basil
1/2 teaspoon Garlic powder
1/2 teaspoon Lemon pepper
4 teaspoons Blackening seasoning
4 4-ounce catfish fillets
OR 1 LB OF CATFISH NUGGETS (nylatinjazz style)
1/2 teaspoon Paprika (or Smoked Paprika)

Preheat the oven to 400 degrees Spray the vegetable oil over the baking sheet 3 times to coat.

Put the cornmeal, thyme, and basil on a large plate and mix well.

Hi all - I just added a recipe to my list for Pumpkin Cranberry bars. They are dee-lish. 175 cals a bar and 15% of your daily fiber, low in fat and a great treat. Here's the recipe below if you want to try it:

1 cup brown sugar
1.5 tbsp margarine, room temp (soft)
1 cup pumpkin (or pumpkin pie mix - use this and delete the pumpkin spices below)
1 large egg
1 egg white
1/3 c 1% milk
1 1/4 c flour
1 1/2 c uncooked oats
1 tbsp pumpkin spice (OR 1/2 tbsp cinnamon, 1/4 tbsp nutmeg, 1/4 tbsp cloves)

My husband started a new job a few weeks ago and has been having a rough time of it, so I decided to make one of his favorite dinners, Taco Casserole. But I also wanted something that I could eat, so I decided to tweak it and make it more "green".

Earlier today, vernaf asked for a recipe using black-eyed peas. I remembered this one that I adjusted because I don't care for chickpeas.
My favorite olive oil is Goya extra-virgin. Great taste!

2 cups (16 oz.) cooked red kidney beans
2 cups (16 oz.) cooked white or Great Northern beans
1 cup (8 oz.) cooked black-eyed peas
1/4 c. chopped onions
2 cloves garlic, minced
2 tbsp. snipped parsley
1 1/2 tsp. salt
Dash freshly ground pepper
1/2 c. olive oil
1/2 c. wine vinegar
1 (16 oz). box whole.wheat penne

Here you go if you really miss cake. You can do this.

1.5 cps Bisquick Heart Smart Baking Mix
1/4 cp unsweetend Cocoa Powder
1 cp Splenda
.75 cp fat free milk
2 Tbsp fat free Half and Half (or coffemate)
1/4 cp Unsweetend Applesauce
1 tsp Vanilla

Pre heat oven to 375. Coat 8X8 pan.
Mix baking mix,cocoa pow. and splenda. Add milk & half &Half (I used N/F Coffemate)Applesauce and vanilla.

Hummus (very low fat)

2 15.5 oz cans garbanzo beans (drained, retain juice)
1 fresh lemon, juiced
1 1/2 tbsp tahini
1 tsp garlic, smashed very fine
1/2 tsp salt

In the bowl of a food processor, add drained garbanzo beans, lemon juice, tahini, garlic & salt. (I also grate some lemon peel into the mixture). Pulse and scrape sides. Add juice from beans a little at a time until the desired consistance is reached. I add about .3 oz total. Process until smooth. Serve with fresh veggies (carrots & red bell peppers are my favs) ...

just wanted to share what i just found
Chef Meg's taco seasoning has just as much flavor as those packets from the supermarket, but hers has no salt!
Double or triple the recipe so you always have some on hand.

This recipe will replace one packet of taco seasoning, but you can add more or less to suit your taste.

INGREDIENTS
3 t chili powder
1 t ground cumin
1 t red pepper flakes

DIRECTIONS
Combine all. Store in closed container.

Number of Servings: 1 ...

OK - so I rediscovered this really nice dry spice dip recipe that I made, oh I don't know when, in the back of my spice drawer.

It is fabulous on slice apples! And, I'm sure there are lots of other uses for it, but it is fat, sodium free and dresses up apples so nicely.

I am trying to find it in my cookbooks, but to no avail. I have weeded out a few in the last year and may have ditched the one with the recipe.

If you read this recipe and wanted to make it beware!! I left the milk off the list of ingredients. :) It's 3/4 cup and I've added it below. I figured something was up when the cake was finished in 50 minutes - I left out the milk. Stupid and poopy.

I have clementines and about half a can of lite cherry pie filling. I need a dessert tonight. What can I do with those as ingredients?

We leave for 6 day trip in the morning and I'd like to use them rather than lose them.

I'm thinking of making a little fluff thing with yogurt or whipped cream - toss in some walnuts.
