"Dry & Yummy Delight" - Pineappley Beans

It also has garlic in it. Don't gag! Pineappley Beans are truly what my daughter (almost 8yo) calls "Dry & Yummy Delight."

My family has started calling me the Bean Queen. I cook an awful lot of them these days. beans/slow cooking questions

I'm trying to make chili with dry beans and my questions are -- (1) do I get the beans cooked, and then add the other stuff, or just throw it all in from the start? For chili, whatever veggies I have to add don't need to retain their shape, but my meat already is browned/cooked, so wouldn't it lose flavor cooking again all day? In other cases, I can picture adding raw meat, so it could cook for a long time, but I might want my carrots or other veggies to be firmer. How long in a slow cooker for ...

One Very Green Meal

Two New Recipes to Share
I just mixed these up for the weekend since we tend to eat our worst on the weekends (we don't want to miss time hanging out). I have already tasted them both and they are tasty!

Cucumber and Garbanzo Salad

1 Large Cucumber
1 can reduced sodium Garbanzo Beans (or 3.25 cups cooked)
1 tablespoon mashed garlic
2 tablespoons Balsamic Vinegar
1 tablespoon Extra Virgin Olive Oil
2 tablespoons cilantro



Black Bean Salad

1 Can reduced sodium black beans
.25 cup chopped onions
2 teaspoons lime juice
1 tablespoon cilantro
1 cup frozen corn
1 cup diced tomato
1 tablespoon mashed garlic
1 tablespoon extra virgin olive oil

Since this is still going on, here's a tip from my aunt's cookbook "Cooking with Natural Foods"

"The substance in beans which produce gas - two unusual starches... not broken down by the starch digesting enzymes.... they remain in the (digestive) tract...come in contact with certain bacteria which react to break them down." ...The rest has been adequately described.
To overcome this:
"wash the beans
place in the amount of water needed to cook them and soak all day
freeze overnight
cook them in the same water (ice)
don't add salt
use the meat tenderizer that contains papain

So, I was talking with my mother this evening and brought up the spicy black-eyed peas. I mentioned that this recipe had a lot more fat in it that her other black-eyed pea recipe, and I wondered why she made it. I mean, it's a really good recipe and we've eaten it often, but I don't remember it's fat and calories being so high. She told me this was The Black-Eyed Pea recipe. Basic Pinto Beans
Basic Pinto Beans

My mother calls this her basic pinto bean recipe. The ingredients are easy to get, and the flavors are familiar. We are however in Southern California, so for us the familiar is Mexican flavors. If jalapenos and cilantro aren't your thing don't sweat it. Beans are so simple because they are essentially a blank slate, add the flavors you're familiar with and you're sure to have a winning dish.

Ingredients

  • Pinto beans, 2 cups sorted and soaked (334 grams)
  • Onion, 1 halved and peeled (240 grams)

With all of the bean and grain salads we've been posting lately, everyone's lunches had better be kickin' it!

Your co-workers should be jealous of all the colorful, whole foods you've been eating.

Heck yea you cook with quinoa, and your down with bulgar; beans bring 'em on, and grains... no brainer!

Here is another one to add to your repertoire: White Bean, Tuna and Lemon Salad. It's super refreshing and simple. And as always, beans are inexpensive, you get multiple meals, and they are rich in fiber. This dish is also full of protein because of the tuna.

But hey, nutrimirror keeps screaming fiber at my mother and her wallet keeps screaming, “take it easy.” As before, mom went to her cupboards and refrigerator for ingredients.
