Fast Food, m.o.m style
On those nights when we want something fast, tasty and better for us, this is our go-to-homemade-fast-food-meal (with variations as seasons change).
Tilapia : Spinach : Heirloom Tomatoes
Mom and I go to church Sunday evenings and it's usually on that night that one of us says: "Fish and a veg?" If it wins, we head to the market; if the idea is squashed, we head to Bety's Tacos (mmm, mmm, good!).
Today at NutriMirror, mom asked Pam if she and Jim have a go-to easy meal and sho 'nuff they do. For the Rays it's ground chicken breast patty, spinach, and some other veggie (right now tomatoes) - ha!, sound familiar? Gotta love those summer tomatoes!
If you would like to give our meal a try, here are the deets:
Saute Tilapia in a a bit of olive oil, salt and pepper.
Cook spinach in a saute pan with a bit of water.
Slice tomatoes, add a little salt and pepper.
