Chicken Breast 101

Tuesday was full of chicken questions. Deeishealthy commented on chicken tenders and how she didn't know they were an actual piece of the chicken. She thought they were just a deep fried creation of fast food restaurants.

Then Munkstir had us all rolling on the floor in laughter with her chicken boobie quandary. "Is half a chicken boob, half of a half?"

Well get out your pencils, you're gonna want to take notes -there will be a test. M.O.M has the 411 on the humble chicken breast -with pictures! (and a visual tutorial on chicken tenders to boot).

Lesson 1: behold a whole chicken breast. Yes, a whole chicken breast is two pieces -both sides of the chest area.

Lesson 3C: the tender removed

Lesson 4A: the chicken tender. Note the small white tendon sticking out, you'll want to remove that, it's tough.

Lesson 4B: removing the tendon. Hold the end with a paper towel; run a knife down the tendon, scraping the meat away and pulling on the tendon at the same time.

Lesson 4C: tendon removed

Lesson 4D: tender put back in shape

So here's where it get's tricky. The food industry (restaurants, packaged foods, the market) has decided to call half a chicken breast, A CHICKEN BREAST; therefore confusing us all, because in the culinary world A CHICKEN BREAST is the whole chicken breast. So the short of it is this, go by weight.
