Another simple salad

With all of the bean and grain salads we've been posting lately, everyone's lunches had better be kickin' it!

Your co-workers should be jealous of all the colorful, whole foods you've been eating.

Heck yea you cook with quinoa, and your down with bulgar; beans bring 'em on, and grains... no brainer!

Here is another one to add to your repertoire: White Bean, Tuna and Lemon Salad. It's super refreshing and simple. And as always, beans are inexpensive, you get multiple meals, and they are rich in fiber. This dish is also full of protein because of the tuna.

Ingredients

  • White beans (cannellini, great white northern), 1 can (425 grams)
  • Tuna, solid white albacore in water, 5oz. can (142 grams)
  • Lemon juice -fresh squeezed, 1/2 lemon (16 grams)
  • Flat leaf Parsley, fresh, 1/4 cup (8 grams)
  • Salt and freshly ground pepper, 1 pinch each

Preparation

Drain and rinse beans.

Drain tuna.

Chop parsley.

Juice lemon.

Mix together, add salt and pepper.

Enjoy.

Makes 3 servings.

You can of course play around with ingredients in this dish. Use a different fresh herb (fresh being key here), add a teaspoon of extra virgin olive oil, use a different bean (the great white is very traditional), use chicken in place of the tuna. Go crazy, it's your salad!
