Leftovers: here's one idea

Do you remember the post we did on roasted vegetables? Well here is a quickie pureed soup mom made with the leftovers. Total yumminess.
The leftover veggies were butternut squash, sweet potatoes, and shallots. Mom put them through a food mill to get a puree, added chicken stock (amount depends on the consistency you are going for) and brought everything to a boil. She then turned the heat down to medium and seasoned as needed.

So simple and yet the vegetables had a depth of flavor due to the roasting.
Do you know what a food mill is? It doesn’t plug in and there aren’t any switches. It has two main components and 3 different blades. It’s a kitchen appliance that has been around for years and we highly recommend it. The picture below shows how a food mill sits on a bowl when in use.
