Homemade Granola

"So good and easy" writes my mom in the margins of the recipe Crunchy Granola from Cooking Thin with Chef Kathleen by Kathleen Daelemans.

Store bought, national brand granola is almost always filled with too much sugar and fat, not to mention preservatives. Take control of the ingredients in your granola by making your own. If you are trying to eat more thoughtfully: less fat, less sugar, more whole foods; homemade granola is a simple way to begin. With a few tweaks to the cookbook recipe, my mom created her own tasty, good-for-you granola that has become a favorite.

Ingredients

  • 1 cup (6 1/4 ounces) firmly packed dark brown sugar
  • 1/2 cup water
  • 4 tsp (1 1/2 ounces)pure vanilla extract
  • 1 tsp (4 grams) salt
  • 1 container (18 ounces) old-fashioned rolled oats
  • 2 cups (9 1/2 ounces) slivered almonds
  • 1/2 cup (94 grams) ground flax seed
  • 1/2 cup (2 3/4 ounces) raisins
  • 1/2 cup (2 1/2 ounces) sour cherries
  • Preparation

    Preheat oven to 275˙F. Line a cookie sheet with parchment paper, set aside.

    In a 4-cup glass measuring cup (no smaller, it can boil over) combine brown sugar and water. Microwave on high for 5 minutes, until sugar is completely dissolved. Add vanilla and salt; stir until combined.

    Place oats, nuts and ground flax seed in a bowl; pour brown sugar syrup over mixture and blend well. Spread mixture on the cookie sheet and bake for 45-60 minutes, or until golden and crunchy.

    When finished baking, mix in raisins and sour cherries. Let cool completely before storing in an airtight container.

    Serving size 1/2 cup (2 ounces)
