Caught the baking bug today!

I made Banana Nut Oatmeal muffins, Black Bean Brownies and No-Bake Chocolate Peanut Butter cookies!

Banana Nut Oatmeal muffins (350 deg oven, 25-30min)
3 ripe bananas
1/3 c. melted butter
1/2 c. sugar
1/4 c. splenda
1 large egg (beaten)
1 tsp vanilla
1 tsp baking soda
1 c. flour
1/2 c. old-fashioned oats
1 tbsp wheat germ
1 c chopped walnuts.

Super easy to make in a single bowl:
1) Mash the bananas and mix in the butter.
2) Add sugar, splenda, egg and vanilla, mix.
3) Sprinkle over the baking soda, mix.
4) Add in flour, oats and wheat germ, stir until just mixed.
5) Fold in walnuts
6) Pour into greased muffin tins (my pan holds 12), bake 25-30 minutes or until a toothpick comes out clean.

Black Bean Brownies (350 deg oven, 30 minutes)
1 can (15.5 oz) black beans, well rinsed and drained
3 large eggs
3 tbsp canola oil
1/4 c. unsweetened cocoa powder
1/2 c. sugar
1/4 c. splenda
1 tsp vanilla
1 tsp instant coffee

Blend all ingredients together in a food processor, pour into a greased 8x8 pan, bake until the top is dry and the edges start to pull from the sides and/or a toothpick inserted comes out clean. Cut into 16 squares.

(For a more cake-like texture, also add 1 tsp of baking soda. These are also great with chocolate chips and chopped walnuts sprinkled on top.)

No-Bake Chocolate Peanut Butter cookies
2 c. sugar
1/4 c. unsweetened cocoa powder
1/2 c. milk
1/2 c. butter
1 tsp vanilla
1/2 c. natural unsalted peanut butter
3 c. instant oats

1)In a medium saucepan over medium heat, melt butter and add the sugar, cocoa powder, milk, and peanut butter.
2) Bring to a boil, boil for 1 minute.
3) Remove from heat, add vanilla and oats. Stir until well mixed.
4) Drop rounded spoonfuls onto waxed paper or parchment paper. Let cool 1 hour.

(I used a regular teaspoon and got about 38 cookies total of varying sizes. The recipe I adapted made 3 dozen)

Substitute as you will! I pretty much cleaned out my baking pantry, haha.
