I look forward to returning to work tomorrow and get myself back on schedule. Cooking Time: 15 minutes
2 or more cups of the the Chile Colorado
1-2 tbls olive oil
1 small onion
2 cloves of garlic, minced
a little salt and pepper
1 pound of ground beef, turkey or pork
1 cup of shredded cheese
1 cup of fresh chopped lettuce
1 cup of fresh chopped tomatoes
1 cup of oil for frying tortillas
10 corn tortillas
The amount of toppings you use for each enchilada is a personal preference, the measurements above are estimated.

Chile Colorado (Basic Red Chile Sauce)
Yield: 2 cups
Temperature: Medium, Low
Freezes Well
Cooking Time: 10-15 minutes
2 tablespoons shortening
2 tablespoons flour
1/4 - 3/4 cup Red Chile Powder
2 cups chicken or beef broth
3/4 teaspoon salt
1/2 teaspoon garlic
Oregano (optional ½ tsp)
Cumin (optional ½ tsp)
1.Heat shortening in a medium saucepan on medium heat. Stir in flour and cook, I like to cook until the flour turns light brown.

1) I brought a fresh fruit tray
2) I ate my snacks before hand
3) Oops! I was not a bag lady today.
4) The desert was homemade - Flan! (oh and ginger snaps, and just because they are extremely thin, does not mean I should have eight of them!
5) I ate a total of 1200 calories for lunch, I believe I have 220 calories left to stay in the maintenance.

I ate it slow and savored it! I want another one! I am not hungry - I just love peanut butter and I love the new peanut butter I found.

February 15, 2010, 1:22 pm Steel Cut Oatmeal & Egg Whites | For lunch today I made Steel Cut oatmeal with the egg whites... I loved it! To be truthful, it did not change the the flavor, but now it has the added protein!
This is my recipe
1 c. steel cut oats
4 c. water
1/2 c skim milk
2 tsp cinnamon
2 tsp vanilla
4 egg whites
Cook all the ingredients above with the exception of the egg whites for 30 minutes on simmer, egg whites should be added at the end. I added the egg whites when the oatmeal was done cooking. There is enough heat to cook the eggs through. When adding the eggs, stir ... |

Today Mark and I celebrate our 22nd anniversary. We have lived in the same home for 21 years, we were both born and raised in Henderson. We graduated from the same high school. I was not crazy about him in high school. Actually he did not know I even existed in high school. We had mutual friends and often would run in to each other. I successfully lost 30 pounds in a years time with walking being my exercise. Of that 30 I gained 5 it back over the holidays, and I have not lost those extra five pounds yet.
