Serving Up A Smile 1/31/12: Orange You Glad It’s [Almost] Super Bowl Sunday?

Whether you are a Pats fan or are rooting for Big Blue, it’s hard to argue that the true star of the winter season is citrus fruit. Bright and full of flavor—and in season when most fruits and veggies are bland and costly—it lifts up the flavor of food without adding fat or salt and it offers a brightness that is pleasing to the palette.

The zest or outermost layer of skin on fruit such as oranges, lemons, limes, grapefruit and pummelo, is a terrific way to add zing and that something special to food can save us when we might otherwise grab a salt shaker.

Citrus zest is something I add often to lift the flavor of many a bland dish or pot of soup. Where better to enjoy it than in a bowl of Pats Fan's Lucky Salsa?
