Total Fat

Fats consist of a wide group of compounds that are generally soluble in organic solvents and largely insoluble in water. The energy equivalent of fat is approximately 9 calories per gram, which is more than twice the number for an equal weight of carbohydrate or protein. Fats are sources of essential fatty acids, an important dietary requirement. Fat-soluble vitamins (A, D, E, and K) can only be digested, absorbed, and transported in conjunction with fats.

Dietary recommendations: The 2005 Dietary Guidelines for Americans recommends that between 20 and 35% of total calories consumed come from fat.
